Healthy Breakfast: Rice with coconut milk and caramelized bananas

Today we will teach you to prepare: Rice with coconut milk and caramelized bananas. A recipe from @beingbiotiful.

Ingredients (for two persons):

  • 185 g rice
  • 500 ml water
  • 250 ml coconut milk
  • A pinch of salt
  • 3 teaspoons cinnamon powder
  • Vanilla
  • 2 tablespoons coconut oil
  • 2 bananas
  • Tahini
  • Desiccated coconut

Follow these steps:

  1. In the first place, we recommend that you soak the rice in water for a few hours. This step is optional but advisable.
  2. When that’s done, strain the rice and cook it in the 500 ml of water.
  3. After approximately 15-20 minutes, add the coconut milk and stir well.
  4. Now, add the cinnamon and the pinch of salt and stir again.
  5. Cut the banana along its length and cook the slices in the coconut oil until they turn a golden brown.
  6. It’s time to dish up! Serve the coconut milk rice with the bananas, a tablespoon of tahini, desiccated coconut and cinnamon.
  7. Voilà! Your snack’s ready in the twinkling of an eye. Enjoy it!
