We’d love to have a spell like RIDDIKULUS! And transform our greatest fears into something that’s fun and surreal…don’t you think?Well, SPECULOOS are very tasty butter biscuits, a typical Belgian recipe that is also very popular in Holland. They’re normally made for the Christmas festivities (St NicholasDay) with butter, flour and sugar. Besides, the moulds you use to make them are fun and soon the house is filled with yuletide aromas and figures. Our favourites are María Lunarillos’s moulds or Claudia&Julia’s. In another bowl, blend the butter and sugar until the mixture gets fluffy and white. Then blend in the milk little by little.

Add half the amount of flour. Flip the mixture on to the table and add the rest of the flour until you get a soft dough. Cover the dough with film so that it doesn’t dry out and start dividing it into pieces for the biscuits.

Brush the moulds with oil before using them and wait for the oil to be absorbed. Sprinkle a little flour and icing sugar on them, making sure you remove any excess amount…Sprinkle some flour on the table top and roll the dough out with a rolling pin.

Place it in the mould and gently press down with your fingers. Use a knife to remove any excess dough and continue in this manner until you use it all up.

Place the biscuits on a tray and put them in the oven for approximately 15 minutes.
